Coconut Lemon Shrimp Stir Fry

Ingredients:

12 oz Gorton's Lemon Butter Sauced Shrimp
1 Tbsp vegetable or olive oil
16 oz stir-fry vegetables, frozen
2 Tbsp scallions, chopped
1/4 cup coconut milk
3 cups white rice, prepared

Directions:

1. Prepare Gorton's Lemon Butter Sauced Shrimp according to package instructions.
2. In the meantime, heat oil in a large non-stick skillet over medium-high heat for 1 minute and sauté vegetables for 5-10 minutes.
3. Add scallions and coconut milk to shrimp mixture, serve over rice and enjoy!
