Caramelized Onion and Feta Cheese Fillets

Ingredients:

6 Gorton's Classic Crunchy Golden Fillets
2 Tbsp vegetable or olive oil
2 large sweet onions, sliced
1/8 tsp salt
1/8 tsp pepper
2 garlic cloves, minced
1/2 cup chicken broth
1 1/2 Tbsp cornstarch
1 1/2 Tbsp water
1/3 cup feta cheese, crumbled

Directions:

1. Prepare Gorton's Classic Crunchy Golden Fillets according to package instructions.
2. In the meantime, heat oil in a large non-stick skillet over medium high heat, sauté onions for 10 minutes then with garlic for 1 minute and add chicken broth.
3. Bring mixture to a boil, whisk together cornstarch and water and add to broth.
4. Stir broth mixture until thickened, top cooked fillets, sprinkle with Feta cheese and serve immediately.
