My mom was watching my oldest child when he was about 2. When I picked him up she told me how much he enjoyed the fish sticks she had fed him for lunch. A light bulb went off in my mind and my simple tip is to start feeding kids fish at a young age. All four of my boys love fish (especially Gorton's Fish Sticks). My oldest is now 14 and he still loves eating fish.
