Greek Salad Fish Pitas

Ingredients

16 Gorton’s Smart & Crunchy Fish Sticks
3 cups chopped Romaine lettuce
1 cup finely chopped cucumber
1 cup halved grape tomatoes
1/4 cup finely chopped red onion
1/4 cup sliced black olives
1/4 cup finely crumbled feta
1 tbsp lemon juice
1 tbsp olive oil
1/4 tsp each salt and freshly ground pepper
4 medium whole-wheat pita pockets
1/2 cup tzatziki
Preparation
Step 1
Prepare Gorton’s Crunchy Breaded Fish Sticks according to package directions.
Step 2
Meanwhile, toss lettuce with cucumber, tomatoes, onion, feta, lemon juice and olive oil. Season with salt and pepper.
Step 3
Cut each pita in half; carefully open pockets. Spread tzatziki on the bottom of each pocket. Fill with salad and add 2 fish sticks. Serve immediately.
Notes: This sandwich is just as delicious with whole-wheat tortillas or crunchy bread.
