Baja Fish Tacos
A taste of summer in every bite. These Baja Fish Tacos, made with Gorton’s fish sticks, have everything you want: fresh colorful veggies, savory queso fresco, a dash of citrus, and a kick of heat. Bon appétit!
Ingredients
Gorton's seafood
FOR TACO:
1 flour tortilla
1/4 cup corn pico
2 Gorton’s Fish Sticks
1/4 cup red cabbage
1/4 avocado
1 tbsp crumbled queso fresco
1 tbsp pickled red onions
1 tbsp sriracha mayo
FOR CORN PICO:
1 cup Roma tomatoes
1 cup black beans
1 cup charred corn
1/4 cup cilantro
1/8 cup lime juice
Salt & pepper to taste
Preparation
FOR TACO:
Step 1
Slightly char the tortilla on high heat.
Step 2
Prepare fish sticks according to package directions.
Step 3
On top of the tortilla add sliced avocado, corn pico, 2 fish sticks, red cabbage, queso
fresco and red onions.
Step 4
Drizzle with sriracha mayo.
FOR CORN PICO:
Step 1
Mix all ingredients together and serve.
