Shrimp Primavera
Lightly tossed linguine with tomatoes, peppers, onions and Parmesan cheese. Add cooked Shrimp Scampi and enjoy a refreshing meal.
Ingredients

12 oz Gorton’s Shrimp Scampi
1 Tbsp olive or vegetable oil
1/4 cup onions, chopped
1 green pepper, chopped
7 oz tomatoes, diced
4 oz linguine, prepared
Parmesan cheese, freshly grated
Preparation
Step 1
Heat oil in a large non-stick skillet over medium heat and sauté onions and peppers for 5 minutes.
Step 2
Add frozen Gorton’s Shrimp Scampi in a single layer to skillet and cook for 9 to 13 minutes, occasionally turning shrimp.
Step 3
Blend tomatoes with the shrimp scampi, add linguine and top with desired amount of freshly grated Parmesan cheese and serve immediately.
