Simple Salmon Meal with Rice & Broccoli

Ingredients
Gorton's seafood
1 package of Gorton’s Simply Bake Salmon
1 bunch of broccolini
1 tsp extra virgin olive oil
pinch of both salt & pepper
1 cup brown rice
2 cups water
fresh lemon slices
Preparation
Step 1
Preheat oven to 350°F.
Step 2
Place 2 cups of water and 1 cup of brown rice into a medium sauce pan. Bring to a boil, then reduce heat to simmer, cover and cook for 20 minutes until rice is soft and fluffy.
Step 3
Cook the Gorton’s Baked Salmon to package directions until reaching an internal temperature of 145°F or higher.
Step 4
Meanwhile, rinse and chop off the ends of the broccolini. Heat the cast iron, drizzle with olive oil, add the broccolini and mix to cover with oil, add a pinch of both salt and pepper- cook for about 5 mins until dark green and tender.
Step 5
Distribute between two plates, pour the extra sauce from the salmon over the rice, garnish with fresh sliced lemons. Enjoy!
