Simply Bake Salmon Caesar Salad with Homemade Dressing

- Preheat oven to 425°F. Prepare Gorton’s Simply Bake Salmon according to package instructions.
- In a bowl, whisk together olive oil, lemon juice, Dijon mustard, parmesan cheese, anchovy paste, garlic, salt and pepper.
- Toss green lettuce, dressing and croutons together and garnish with shaved parmesan cheese.
- Serve with Gorton’s Simply Bake Salmon.

1 bunch green lettuce
1 cup croutons
1 cup cherry tomatoes, halved
1/3 cup olive oil
¼ cup fresh lemon juice
1 tbs. Dijon mustard
2 tbs. parmesan cheese
1 tsp. anchovy paste
2 garlic cloves, pressed
½ tsp. salt
¼ tsp. coarsely ground black pepper
