Tilapia with Edamame and Avocado Salad
Double the recipe and save the leftovers to have the next day over salad greens for a fresh lunch.
Ingredients
Gorton's seafood
1 pkg (2 fillets) Gorton’s Signature Grilled Tilapia Fillets
1/2 ripe avocado, chopped
1/2 cup frozen shelled edamame, thawed
1/2 cup finely chopped red pepper
1/3 cup frozen corn, thawed
1/4 cup finely chopped red onion
2 tbsp lime juice
1 tsp honey
1/2 tsp ground cumin
1/4 tsp each salt and pepper
Preparation
Step 1
Prepare Gorton’s Signature Grilled Tilapia Fillets according to package directions.
Step 2
Meanwhile, toss the avocado with the edamame, red pepper, corn, red onion, lime juice, honey, cumin, salt and pepper. Let stand for 5 minutes. Serve with hot, cooked tilapia fillets.
